The word “Intero” translates to “whole” or “complete” in Italian.

Intero offers a contemporary Italian inspired menu highlighting the changing seasons in Central Texas. We wholeheartedly embrace the importance of sustainability by utilizing locally raised whole animals and farmed whole produce. This drives the idea behind Italian cuisine which is rooted in necessity and gratitude towards every ingredient.

Unique to Austin, but inspired by the popular concept experienced at small cafes throughout Italy, Intero features an artisan chocolate counter in its front space. A variety of truffles, barks, and sipping chocolates in classic and Italian flavors can be enjoyed along with our locally roasted coffee program. Intero also offers a curated wine list and an engaging yet approachable cocktail selection.

With sustainability as our focus, The warmth of reclaimed materials can be noted throughout our interior design and build space, allowing us to turn part of Austin’s iconic Bud’s Motorcycle Shop into an inviting dining atmosphere.

The fact that the whole–whether plant, animal, or material–is fully utilized, ensures that Intero is sustainable and of the highest quality.

About Us

Our team, featuring Austin born and raised husband and wife duo, Ian Thurwachter & Krystal Craig, plus professional third wheel McVay Bennett, have over 40 years combined experience in the restaurant industry.


Ian Thurwachter



Ian has been a chef at several top Austin institutions, from Jeffrey’s to Vespaio, and was named among Austin’s “30 under 30” in 2014. His experience, talent, and passion lead him to develop Intero’s concept and approach in whole animal butchery and whole produce usage in his dishes. Ian’s appreciation and understanding of ingredients shines through in his cuisine.

Fun Fact: upholds a family practice in carpentry and built all the tables in the restaurant himself.

Krystal Craig



Krystal is a self taught chocolatier who has produced chocolates for multiple establishments including boutique and well-known restaurants and hotels. Her focus in working with specialty couverture chocolates and organic ingredients to create elevated classic flavors and unique offerings have earned her multiple accolades and write-ups over the years as a rising star for chocolate in Austin.

Fun Fact: is an expert pilates instructor


McVay Bennett

general manager

McVay began his experience over a decade ago at Pappadeaux's before going to work for Iron Chef winner Kent Rathbun for seven years. He since moved on to re-open Jeffrey's as a captain and sommelier. Through his dedication to excellence and strength in service, he hopes his talents will help people feel right at home at intero.
